He plotted to use his grandmother Shelia to steal Jordan and take him abroad to Morocco to start a new life away from his mum Chelsea.
But it backfired when Kim and Denise chased Sheila down at the airport and stopped her from leaving.
On Thursday’s show, a furious Gray blames Ian for tipping Chelsea off when she came to visit him at the prison.
Ian denied it but Gray continued to point a letter opener at him.
Gray told him: “You’ve done enough talking with your stupid mouth.
“All I wanted to do was keep my boy safe from the poision she was dripping in her ear.”
A petrified Ian told him: “Look, I did everything you told me to do, OK?
“I didn’t know anything to tell anyone, did I?”
Ian then tried to press the emergency button, but Gray pushed him to the floor and threatened him.
Ian then tried to play on Gray’s emotions by telling him that his children were once kidnapped by their mother, which left him in “agony not knowing if he’d see them again.”
Gray said: “Last week when I saw Jordan, I could only see Chelsea. There was no part of me in him. Like she’d done it deliberately.
“I just wanted a chance with him.”
But Ian then angered Gray when he told him: “Listen, if your grandmother had managed to take him, you’d still be inside.
“I mean, you’d have ripped away the only family Jordan knew, for what?”
An enraged Gray said: “No. He’s my boy and his place is with me.”
Seeing Gray becoming noticeably irritated, Ian tried to grab the blade but it resulted in a tussle between him and Gray.
As they fought over the blade, Ian groaned: “No, no.”
But it was actually Gray who had been stabbed and he slowly fell to the floor, before saying to Ian: “Tell Jordan I love him.”
Gray was rushed to hospital, but Ian feared his sentence would be increased for the attack, despite him saying he did it in self defence.
The officers then told Ian that they would have to wait to see if Gray pulled through before making a decision.
It comes after BBC viewers hit out at a “ridiculous” show blunder earlier this week.
Chelsea went to visit Ian in prison, but was left in shock when she came face to face with her ex-husband and serial killer Gray.
An argument ensued between as he cruelly told her his grandmother Sheila was currently taking their son Jordan out of the country.
As the security pulled her away from him, she screamed: “I will kill you,” before falling onto the floor in tears.
The guards took Gray back to his cell as the famous ‘Duff Duff’ played.
Despite all of the drama, BBC One viewers were left confused over how Gray would have been allowed to pop into the visitor’s section without anybody coming to visit him.
Fans flocked to X to share their thoughts as one pointed out: “Gray being allowed in the visitors room when he hasn’t got anyone visiting him is just ridiculous.”
Another person penned: “Never seen something so unrealistic in my life I get it’s a soap but come on.”
Somebody else wrote: “At this point if you’re gonna make things this unrealistic just bring Ronnie and Roxy back… thanks.”
